Hello All,
Just looking for an temperature sensor/switch that I could use with OS to start a program running.
Would want it to start around 2 degrees C as it is turning on water to help protect tress from frost.
Is anyone using something like this and can point me in the right direction? Would be great if it was adjustable as well so that the switch temperature could be adjusted.

I feel like maybe an old-school thermostat would do it — those have a reed switch inside and is basically a temperature controlled switch (though the temperature accuracy may be low). Even electronic thermostats should be fine — most of them use a relay inside which is basically a switch.
